What it's for
Each Option Type (e.g. "Size") has a list of Option Values (e.g. Small, Medium, Large). Assigning one or more Option Types to a product generates every combination as a separate variant, each with its own SKU, price, and stock.

Option Types define the attributes that generate a product's purchasable variants, like Size or Color.
Example
Create an Option Type named "Color" with values Red, Blue, and Green. Add it to a product's Variants, and the product now has 3 purchasable variants, one per color.
How it differs from Property Types
Option Types create variants a customer chooses between at checkout. Property Types just describe a product; they don't create variants.
